Cili Restaurant at Bali Hai Golf Club has an amazing Whiskey list with a heavy concentration on Scotch, Irish, Canadian, and American Whiskey. Our selection is one of the largest and most diverse in Las Vegas as we represent over a 100 different brands.
Our Scotch List includes selections from Speyside, Highlands, Low lands, Islay, Jura, Campbeltown, and Arran. Cili serves a Glenlevit 1964 Cellar Collection, Mortlach Rare Old 1981 and the limited just released Lagavulin 8 year just to name a few. We also offer over 25 blended Scotch Whiskeys, Johnny Walker and Sons Odyssey is just one of eight options we serve.
American Whiskey and Bourbon are two of the fastest growing categories on Cili’s menu. We offer rare Whiskey to include Yippee Kay Yay which is from High West Distillery in Park City, Utah. We also serve some small finds such as Clyde Mayes Alabama Style and Willet Small Batch Rye, along with all the favorites.

What is the difference between American Bourbon and American Whiskey?
****Bourbon needs to be produced in America and made from 51 percent corn, and whiskey does not, bourbon also needs to be stored in new charred-oak barrels, whereas whiskey barrels do need to be oak, but not new or charred. To be called bourbon, the liquid needs to be distilled to no more than 160 proof and entered into the barrel at 125. For other whiskies the liquid must be distilled to no more than 190 proof. This is actual bourbon law. Bourbon does not have to be made in Kentucky, but 85% of American Bourbons are.
